Triticale is a hybrid cereal obtained from the cross between wheat and rye. Created at the end of the 19th century, it was brought up to date in 2007 by the Dry Fly distillery located near Spokane in the heart of Washington State. This refined version in Cognac barrels and bottled at the natural level requires time to take full advantage of all the olfactory and gustatory riches with which it abounds. The final, a veritable maelstrom of flavors, is one of the highlights of the tasting.
Profile: thunderous, the nose is somewhat wild. When aired, it becomes herbaceous, fruity, spicy (black pepper) and chocolatey. Smoother, the mouth is very close to the cereal before becoming fruity (apricot, grape) and vanilla. Notes of red fruit and beeswax on the finish.
