Made entirely from Espadin agave, this Del Maguey comes from a region known as ‘Mixe’, situated 2,600 metres above sea level and reputed for its tropical climate and lush vegetation. Matured over a period of 23 months in barrels from the Americandistillery Stitzel-Weller (which closed it doors in 1992), this batch is in reality a series of highly original olfactory and gustatory experiences. Extroverted, powerful and firm, it is can also be mellow, almost soft.
Extremely powerful and highly original, the initial nose immediately evokes a superb white wine in the process of maturing. Then spices surround the aromatic palette, full of agave, vanilla, ripe fruit (grape, pear) and strong spices (cloves, pepper). Extremely refined, it develops into notes of fern, cut hay and white flowers (lily of the valley, lilac). In perfect harmony with the nose, the palate is extremely indulgent (candied fruit and marzipan). The high quality of the distillate brings out its delicate minerality (slate, sandstone). The mid-palate is also softly herbaceous (agave) and anise-flavoured. The finish is crispy (pear, green grapes, apricot). The retro-nasal olfaction wavers between notes of agave and soil.
