Produced from a double distillation in directfired pot stills, this version is a nod to the founders of this Californian Sonoma distillery and their distant relatives who were the first to distil yellow corn in the Western United States. Also composed of unmalted rye and cherrywood-smoked barley, its aromatic and gustatory palette is both classic and extremely unusual, just like its very complex, fruity register.
Profile: fresh with lots of vitality. The midpalate has a caramelised, roasted (coffee, mocha) sweetness.
