With a fairly high ester content of 550 to 700 grams per hectolitre of pure alcohol, this cuvée, christened STCE, is one of the many marks produced by the Long Pond distillery. In terms of aromas, this 2005 bottling, which stands out for its stripped-back classicism, is delicately woody, luscious (rosemary) and spicy (clove). On the palate, after an initial sequence overflowing with exoticism, flavours of sugarcane and cane sugar altruistically and irreversibly take hold of the flavour palette.
